At The Hammie Ranch, we raise cattle with intentional care, responsible land stewardship, and a commitment to quality over convenience. Our beef is offered exclusively through whole, half, and quarter shares, allowing families to stock their freezers with thoughtfully raised beef from a single animal.

Step 1: Reserve Your Share

A non-refundable deposit secures your whole, half, or quarter share prior to harvest.

Step 2: Processing

The animal is harvested and processed at a state- or federally-inspected third-party facility.

You will work directly with the processor (when applicable) to select your preferred cuts.

Step 3: Pickup

Finished beef is picked up directly from the processing facility. Processing fees are paid directly to the processor.

What You Can Expect


Beef shares are sold based on hanging weight (also known as hot carcass weight), which is the weight of the animal after harvest and prior to final processing.

The final packaged “take-home” weight will be lower than the hanging weight due to:

  • Bone content

  • Fat trimming preferences

  • Moisture loss during aging

  • Selected cut instructions

As a general guideline, customers can expect approximately 55%–65% of the hanging weight as packaged, take-home beef, though actual yields vary.

Each share typically includes a balanced assortment of:

  • Steaks

  • Roasts

  • Ground beef

  • Specialty cuts (depending on processing selections)

Specific cut counts and weights cannot be guaranteed, as they depend on animal size, structure, and customer cut preferences.

Processing is completed by a licensed third-party facility. Customers may be contacted directly by the processor to submit cut instructions.

All beef is provided frozen, vacuum-sealed, and labeled by the processing facility.
